First check that the lentils are free from any little stones, then rinse well and drain. Soak rice in boiling water.
Put oil and onion in cooking pan. Cook onion until lightly coloured, add lentils, cover with water and bring to the boil, then reduce to medium heat and leave to cook until tender to the touch (add water if you feel that the liquid has reduced a lot).
Add rice to the cooked lentils. You need to stir from time to time so it doesn’t stick to the bottom, after ten minutes check that the rice is well cooked, then add salt, mix well and pour in a serving dish.
