Heirloom tomato salad with Halloumi, Serrano ham and Croutons

Ingredients

6 Mixed heirloom tomatoes cut in quarters
100g mixed salad leaves
4 slices halloumi
4 thin slices serrano ham
half loaf sour dough
2tbsp falafel spice
good olive oil

Directions

Cut sour dough into 2 cm squares. Toss together with a good splash of olive oil and falafel spice mix. spread on a baking sheet and toast in oven at 160 degrees until golden brown and crisp.

Lightly oil the halloumi and quickly grill or pan fry. Assemble salad drizzle with plenty good olive oil.
