Ingredients
1Kg Eggplant Round
125g Tahini
100g Lemon Juice
2tbsp Natural Yoghurt
1tsp Crushed Garlic
Salt to taste

Pierce the eggplant with a skewer from different angles and grill on high, rotating from time to time until the skin is charred and you can feel the inside soft.

Peel and put in colander to drain its juice.

In a food processor put the grilled eggplant with the rest of ingredients and process into a dip mixture. Adjust the taste of lemon and salt to your liking.
