Ingredients

400g gurnard (or any other firm white fish)
2 tbsp olive oil
2 tbsp shish tawook
1 tsp sea salt
1 tbsp zaatar

Directions

Combine oil, spices and salt.

Coat fish and leave to marinate for 15 minutes (or longer if you have time).

Heat an extra tbsp of olive oil and pan fry fish on both sides, when cooked squeeze a whole lemon over fish so juice combines with spices and oil in pan.

Once fish is removed, stir pan juices and spoon over fish to serve.

I served with rice pilaff and a rocket, cherry tomato salad, quick easy mid week meal.
