Description

Ingredients

500g Green Beans (Fresh or Frozen)
400g New Potatoes
1 Red Onion (thinly sliced) OR 4 Spring Onions (thinly sliced)
100g Feta Cheese
1tsp Crushed Garlic
50ml Olive Oil
25ml Lemon Juice
1tsp Dried Mint
30g Chopped Parsley
½ cup Black pitted olives
5g Baking Soda (Bicarbonate Soda)
Salt to taste

Directions

Top and tail the beans (if fresh) and in a pan cover them with water adding the baking soda and cook until tender and drain.

Peel, wash and cut potatoes into cubes (1.5 cm size) and either cover with water and cook until soft, or steam in a steamer, and drain.

Put crushed garlic, olive oil, lemon juice in a salad bowl and whisk to combine. Add cooked beans, potatoes, onion, pitted olives, crumbled feta cheese, dried mint, salt and mix thoroughly. Top with chopped parsley and serve.
