Ingredients

500g Red Lentils
Two Onions chopped
3 Tbsp Olive Oil
2 Tbsp Cooking Oil
8 cups Water
Salt to taste
20g Butter

Directions

Rinse lentils and drain. Heat the two oils in a pan, add onion and cook until lightly coloured, add the lentils, cover with water and salt and cook on high, then reduce to medium until well cooked. Use the hand blender to cream it, add the butter.

Serve with toasted pita bread, or croutons.
