Chicken was so moist, tasty and slightly crunchy from the zaatar.  Brilliant at home take out meal.

Ingredients

4 boneless skinless chicken thighs
1 tbsp shish tawook
2 tbsp zaatar
1 tsp sea salt
2 tbsp olive oil

Directions

Coat and rub oil and spices into chicken thighs, cover and leave in fridge for a few hours.

Heat 1tbsp oil in pan, cook chicken thighs on both sides till cooked.

Toast 1/2 pita pockets in toaster to warm and

spread inside your favourite hummous. I filled mine with sliced vine ripened tomatoes, baby spinach, grated carrot, sliced cucumber and chunks of chicken.

Finish with mint natural yoghurt.
